Happy Easter!

Happy Easter!

Feels like its been forever since I've blogged.  The past couple of weeks has been stressful dealing with unemployment and Le Cordon Bleu, but it is finally all over with.  Le Cordon Bleu slapped me in the face with a $1350 bill for my books and uniforms that they wouldn't let me return.  It was a back and forth thing for awhile.  I received my books on the 2nd day of class and the next day was my last day at LCB and they charged me 800 for books and almost $500 for their ugly over-sized uniforms...Seriously?!?!  Its so interesting how they were all super nice to me when I enrolled and once I had to quit, everyone just stopped being helpful and I kept getting passed around with questions still unanswered.  And honestly, a class of 30 + students, all baking the same thing at the same time with one bottle of vanilla extract floating around...NOT THE BEST! 

Lately I've been searching for jobs again and I've actually been getting interviews!  I had an interview yesterday and I am hoping to get the job, but I'm trying really hard not to get my hopes up.  I won't know until after Monday!  Crossing all my fingers and toes!

As for baking, I haven't!!  I am planning on making  cupcakes and blueberry muffins this week though.  Better take advantage of my free time before I get tied up.

Drop out!

Employment Security Department, you are a pain in my ass!!!

There has to be a better way to communicate and get an answer instead of waiting for weeks!

So, I finally heard back from ESD and they stated that I am unable to continue to collect unemployment.  NOW they tell me!  Since, I am unable to work and go to school at the same time, I have to stop going to Le Cordon Bleu to continue to collect benefits.  Income overrules baking. 

Blah Blah Blah....I am now back to searching for administrative work, BUT I will still be taking cake classes on the side.  I guess since I want to specialize in wedding cakes and specialty cakes, its not necessary to learn how to make bread and tons of other desserts. 

Too much to think about, I am in need of a vacation!!!

Day 3

Hey!

I am exhausted and this has just been the 3rd day of school.  Standing for 5 to 6 hours to watch videos, listen to lectures and demos, bake and constantly cleaning is tough on the legs.  We have already done so much!  Today I brought home my baked brownies and chocolate chip cookies.  It appears that we will be baking something each day!  I have over 135 days of school left! 

I do have a major complaint tho.  My uniform is extremely ugly and way too big for me!  Doesn't make me feel to good.  Its so ugly on me that I change in my car before and after school.  Its such a hassle and a pain, but besides my classmates, NOBODY will be seeing me in my uniform.  I'm hoping my dad will be able to alter it for me this week.  Maybe I can make it somewhat fit and cute.

Chocolate Coffee Cake

Lazy Sunday!

Last day before school starts tomorrow!  I am completely looking forward to start, meeting new people and making friends!  I've been in a slump and its time for a change.  =)  I hope this program will keep me pretty busy. 

Yesterday I made dessert for dinner at my sisters place.  Decided to break in my kitchenaid and make another classic dessert, chocolate cake.  I had some issues with baking the cake and learned a couple of no-nos, but ultimately it came out pretty moist and "good" according to friends and sister.  Its okay, can't be judge on my baking until after I graduate!

Orientation

Had orientation at Le Cordon Bleu this weekend.  I seriously cannot wait to start!!  Everyone is so nice and helpful.  They mostly talked about helping us find a job while in or out of school which is very reassuring especially if I get denied unemployment insurance.  I am still waiting to hear back from them.  Cross Fingers!!

KitchenAid

YAY!

I received my kitchenaid today!  Its beautiful and super heavy!  I have to thank Remington for the gift and everything else he has brought for me in the past couple of weeks.  He has been my number one supporter!

I haven't really baked anything yet.  I'm waiting for school to start so I can use the correct techniques and procedures.  And of course, I still have a long way to go for baking equipment.  I have started out with 0 and now its slowly piling up.

Emergency Kit

Happy Monday and Happy Spring!!

I have 2 full weeks left to be completely free until I go back on a schedule.  9 months of time off was sure nice, but I'm ready to go back into society.  Feeling worthless with all this time off.

As of now, I am just waiting to hear back from the Employment Security Department to see if I will still be receiving unemployment while in school.  I HOPE SO! Or I will quickly be in need to find an early morning job.

Something also to stress about, there's been talk of a major earthquake prediction that will hit the pacific coast line by March 26th.  Regardless if it will happen or not, its best to be prepared for today, tomorrow or a few months down the road!  So today I went out and got a bunch of essential items. Below are just a few items. 


I am making one for my parents, my boyfriend, myself and my dog.  After seeing the devastation that hit Japan recently, can't say it can't happen to us.  Hope for the best prepare for the worst.

Strawberry Shortcake

Happy St.Patty's!!

I did it!!  I made my first dessert from scratch!! 

My sister, Anna, invited some friends over for dinner and of course I was in charged of the dessert.  I am NO baker (yet) but since school is starting soon, thought I would TRY.  

So I went with a basic and classic dessert...Old fashion Strawberry Shortcake.
Shortbread and whipped cream from scratch....unfortunately, I do not have my own strawberry patch. 


 
 I definitely think I can improve the aesthetic of this cake...but I will try again a bit later.


Also today, my boyfriend purchased me a kitchenaid!! I should receive it by middle of next week.  Building up my baking accessories/collection is so exciting.  I want everything!

Art + Sweet = My life

Its been a rough 8 months looking for a job in the corporate world.  Unemployment is still high and my patience is running low.  I have applied to over 100 jobs in which a handful were scams, all 5 recruiters I spoke with did not help, 4 interviews I obviously failed at and received over 20 rejection emails all stating the same line, 'After careful consideration, we regret to inform you that you have not been selected in this particular position.'

Talk about a broken record! Or is this the writing on the wall?  Regardless how I take it, I decided that enough is enough!

STOP thinking about money for just a minute or what I think I'm suppose to do and think about what I am good at, what I love and how can I apply that to my life.  I love art and sweets so here is the math....

I am now enrolled at Le Cordon Bleu for their pastry and baking program.  I start in a couple of weeks and now just waiting for my baking tools, uniform and first day of class!  I can't wait!!
